Apricots

Dried apricots are good eating as snacks.

Fresh Apricot Pie:
Quick recipe for Apricot Pie.

Ingredients:

    Double pie crust 9 inches
    6 apricots sliced
    1/3 c. of brown sugar
    1/3 cup of regular sugar
    3 tbsp. flour
    1/2 tsp. salt
    1 tsp. vanilla
    1 tsp. lemon
    Optional:
    caramel syrup
    chocolate syrup

Preparation:
Preheat the oven to 425 degrees F (220 C).
Use crisco margarine to oil the 9″ baking plate. Apply sprinkle of flour throughout, shake and dispose excess into a bowl.
Open and layout one sheet of pie crust. You may finger design the edge of the crust on the baking plate.
In the bowl, add sliced apricots, salt, brown and white sugar, vanilla and flour.
Mix well and pour into the layered pie crust on the 9″ baking plate.
Pour in caramel syrup in a zigzag design throughout the top of the filings.
Same with chocolate syrup.
Cover the pie with the second pie crust, piercing the crust with openings of your choice.
Place a baking sheet on the lower oven rack and put the pie plate on the sheet. Bake for 45 – 50 minutes.

Serving:
Cool for an hour and serve with icecream or any toppings of your choice.
Serves 12.

Dried Apricot Tart:
Quick recipe for Dried Apricot Tart.

Ingredients:

    Double pie crust 9 inches
    10 dried apricots halved
    1/2 c. of walnuts or pecans
    1/3 c. of brown sugar
    1/3 cup of regular sugar
    2c. of flour
    1/2 tsp. salt
    1 tsp. vanilla
    1 tsp. lemon
    1/4 c. of unsalted butter (1 stick of butter)
    Optional:
    caramel syrup
    chocolate syrup

Preparation:
Preheat the oven to 350 degrees F.
Use crisco margarine to oil the 9″ baking plate. Apply sprinkle of flour throughout, shake and dispose excess into a bowl.
Melt 1/4c. of unsalted butter + brown sugar and pour into pyrex 9″ rectangular plate.
Layered halved apricots and nuts.
In the bowl, add salt, 1/4c. of brown sugar and white sugar, vanilla and flour.
Mix well and pour into the layered 9″ baking plate.
Pour in caramel syrup in a zigzag design throughout the top of the filings.
Same with chocolate syrup.
Place a baking sheet on the lower oven rack and put the baking plate on the sheet. Bake for 45 – 50 minutes.

Serving:
Cool for an hour and serve with tea, coffee or any drink of your choice.
Serves 12.
